Easy Apple Salad

I needed a quick dish to take to my Small Group Bible study for our last meeting for the summer. It was a busy day and I didn’t have time to bake and little else in the house and no time to shop. However I DID have apples. I made a quick apple/walnut/cranberry dish in about 15 minutes. It was a hit…refreshing and more like a dessert than a salad, although it could have been served either way.


3 or 4 red delicious apples (any apple will work but the red delicious are sweeter)

Handful of walnuts (or pecans)

1/2 cup of dried cranberries

1/4 cup mayo or less (depending on how many apples…just enough to coat the apples)

OPTIONAL: Stevia to taste for tart apples (sugar can be used or any artificial sweetener but Stevia is my healthy choice. If you use Red Delicious apples you will not need sweetener)


Using an apple cutter (or by hand) cube the apples (do NOT peel) into bite size pieces

Add the other ingredients and stir in mayo just until apples are coated

Refrigerate and serve (the mayo keeps the apples from turning brown and will keep a day or two in the refrigerator)
