I found this yummy banana bread and tweaked it a little. The best part is that it is gluten free and came from a Paleo website, although some say Paleo does not use butter and this recipe has butter.
Delicious Banana Bread – Gluten Free
4 ripe Bananas (I put ripe bananas in my freezer so they are ready to use when I want bread)
4 TBSP (½ stick) melted butter
1 TBSP Vanilla extract
1 ½ cup Almond flour (NOTE: I add a little more of the two flours if my bananas are larger.)
1/3 cup Coconut flour
2 TBSP Flax meal
2 TBSP Hemp seed (optional but adds Omega 3 & 6 & protein)
1 TSP baking powder
1 TSP baking soda
1 TSP Cinnamon
½ TSP Stevia sweetner
½ TSP salt (or slightly less)
1 cup chopped walnuts
In large mixing bowl mash bananas, add eggs, melted butter and vanilla and combine well (I use my stand mixer)
In separate bowl, mix dry ingredients (except nuts).
Add dry ingredients to banana mixture until well blended. Then add nuts and mix.
Pour batter into large loaf pan lined with parchment paper (this makes clean-up a breeze)…OR you can grease your loaf pan if you do not have parchment paper.
Bake approx 60 -70 minutes (check at 60…time will depend on how large your bananas are) Test with a toothpick…it should come out clean and top should be golden brown.
Note: I cut my loaf in half and freeze half IF I’m not going to eat the entire loaf within 4 days. Keep the bread wrapped tightly in aluminum foil in the fridge as it will get moldy if not refrigerated.
