No Peekie Chicken
Chicken (can use any chicken parts, de-boned or w/bone). It is better w/skinless chicken.
1 can Cream of Chicken OR Celery Soup (I use Campbell’s Healthy Request b/c it does not have MSG)
1 can Cream of Mushroom Soup (Golden Mushroom is good, but it has MSG)
1 ½ cups milk (I use Almond milk)
1 ½ cups long grain white rice (NOT instant!)
1 envelope Dry onion soup (I use one w/o MSG…Lipton makes one w/o MSG but so do some store brands)
Mix soup, rice and milk and small amt of dry onion soup in bowl until blended. Pour into a non-stick and/or greased 9 x 13 pan.
Lay chicken pieces on top of rice/soup mixture. Sprinkle a little more of the dry onion soup over chicken. (I use approx 1/2- 3 /4 of the envelope for entire meal but you can use the entire envelope If you are not salt restricted).
COVER TIGHTLY WITH ALUMINIUM FOIL so edges are sealed.
Bake at 300 degrees for 3 hours w/o peeking or uncovering.
Note: This make a great meal to take to a shut-in. FOR SALT RESTRICTED diets, eliminate the dry onion soup and use dried minced onion and a little garlic powder. You can also add a little no-salt Mrs. Dash for flavor.
IF you use a disposable pan, you may have to increase the baking temp to 315-320 degrees.
This will feed 4 or 5, depending on how much chicken you use. I find cutting large breasts into smaller pieces (thigh size) works well.
